Is there a gadget to add simple text to your blog that is more editable than the rich text editor gadget, or do I have to write the code for how I want it to look myself?

Go to Design > Page Elements > Add A Gadget > Text
You can use the editor there to format the text without any HTML knowledge.
If you are not satisfied by that editor, you can use some other editor, and copy the edited text into the gadget.
